My Sister's Simple Scones

2 cups flour: white, whole wheat or any combination
1/3 cup sugar
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda*
1/2 teaspoon salt
1 stick of butter (8 tablespoons) frozen
1/2 cup currants, raisins or any dried fruit chopped to raisin size

1/2 cup plain yogurt, buttermilk, or sour cream
1 large egg, slightly beaten

In large mixing bowl, sift first five ingredients (flour through salt). Coarsely grate the frozen butter into flour mixture.  Using your fingertips, work the butter in slightly until it feels like cornmeal.  Add currants and stir.

Combine yogurt and egg in a small bowl and whisk until smooth.  Add to dry ingredients and mix with a fork.

Work dough with your hands until it forms a ball.  Place the ball on a flour surface and knead slightly.  Pat it into an 8-in disk, 3/4 inch thick.

Using a sharp knife, cut into 8 wedges.  Place on a parchment or silpat lined cookie sheet at least one inch apart.  Bake 15 minutes at 400 degrees or until golden.  Cool on baking sheet 5 minutes before removing.  Eat warm or at room temperature.

Makes 8. Keeps several days at room temperature covered. 

*You could also use 1 teaspoon baking powder and 1/4 baking soda instead, but I like the taste better with the cream of tartar.
